Some of you were interested in my Stollen recipe; here it is:
get a large bowl and add
500g self-raising flour
250g Quark (Sainsbury's, Waitrose and Tesco's stock it; if not Philadelphia/similar soft cheese will do)
approx. 200g mixed peel and 200-300 sultanas (or a 500g bag of mixed fruit)
approx. 180g ground almonds
juice from half a lemon
1 packet of marzipan if you like it (don't add the marzipan just yet though)
Mix all the ingredients and shape into one big loaf (or two, if you want them a bit smaller). If you want to add marzipan, split your mixture into half, shape two loaf shapes, flatten as much marzipan as you like and place it on one of the loaf shapes. Then put the other one on top, so that the marzipan is completely covered.
Bake at 175 degrees for about 1 - 1.5 hours. The Stollen should be a nice golden colour and baked through. Decorate with icing sugar if you like and enjoy! If you have any questions, just contact me.
